A Gourmet Leftover Brunch-i-tizer

You won't believe how they came to be!


It was one of those mornings...(It is so frequently one of those mornings) And I didn't have milk for the cereal, didn't feel like running out at 6 AM to get it. Didn't have syrup for the pancakes...I felt like a scene from "Friday"



This is what I DID have, and this is what we made a moist lasagna loaf with crispy ribbons.

Ingredients
2 cups leftover spagetti, plain
1/2 cup ricotta
2 eggs
2 slices of each salami and capicola cut into thin strips
1/4 c grated parmigiana cheese
1/4 spaghetti sauce

Method
This is the best part! Choose a square (ish) microwavable bowl. (Those shallow corning dishes work great here) Chop up the spaghetti. Mix in everything BUT the meat, and microwave on medium for 7 minutes. Remove to turn over, (Don't stir it) and microwave on high for 4 minutes. When it is done, it should come out of the plate in a solid loaf, that can be sliced! Crisp up the meat ribbons in a frying pan real quick and sprinkle on top. These really make it YUM!

BUT WAIT!
So this makes a LOT of slices, and after we ate our fill there were still leftovers! So I let the kiddo's take a Christmas Tree cookie cutter to the remaining slices, and we decorated them with dried basil, and a few ribbons chopped up. That turned out to be the best little bite!
